Update on the Pantry Challenge:
IT'S GOING WELL! I haven't eaten out all week and barely bought groceries this week.
Especially since I have been sick, I have not been eating as much (READ: super small dinners).
eggs, green smoothie, fruit, sausage (every day!)
I have been having leftover taco meat from before Christmas. I found it the other day-I froze it before I left so I had food so I have been eating that and it's great!
the days I was home I had sweet potatoes, carrots, black eyed peas, coleslaw and a bit of lamb (leftovers from last week)
same as above for lunch (lamb, carrots, black eyed peas, sweet potatoes)
I also had a slice of pizza and wine the other day, one day I had a grilled cheese because I was craving one.
butternut squash soup (i made it so thick with milk that a little is very filling)
For the weekend, I have a bit of lamb, carrots, black eyed peas, sweet potatoes left over! (so sick of eating this...)
Next week will be carb loading!! more potatoes, carrots, steak, soup, etc. I have a cucumber to use as well! I may also throw in a stir fry in there because I have so many frozen veggies--or maybe a chili? we will have to see what I am in the mood for.
