Haven't done one of these in awhile! A other easy recipe designed to be healthy and fast, hence the name Quick and Easy Meals.
These are different than most meals but I honestly just throw everything together by taste. No measuring for me!
PREP TIME: 15-20 minutes
COOK TIME: 4-8 hours in crock pot
1 yellow onion
1 bunch of green onion
Bag of corn
1 bunch of cilantro
Salt, pepper, cumin, paprika, chili powder, garlic powder, onion powder
*most of this was frozen for me. I just threw it all in. If it is room temp, you may need to add some water
Chop onions and bell peppers
Spray crock pot so it won't stick
Add onions, bell peppers, corn and carrots and a bit of seasoning
Add chicken and cilantro and other seasonings
Cook high for 4 hours or low for 8 hours.
Serve with rice and avocado and hot sauce (if desired)
