Another easy recipe I threw together with leftover veggies.
PREP TIME

4-8 hours cooking time
INGREDIENTS
- Red bell pepper
- Onion
- Cilantro
- Peppers
- Salt,pepper,oregano,cumin, chili powder, paprika
- Chicken
DIRECTIONS
- Chop veggies to desired size
- Rinse and clean chicken
- Spray crock pot with olive oil and add a layer of veggies on the bottom
- Add chicken and season on all sides
- Stuff chicken with veggies and seasoning
- Add leftovers to the top
- Add a bit of water if you're worried about dryness (I've never had this problem)
- Cook 4-8 hours (4 on high, 8 on low)
- Serve!
