When you get a pound of lamb for 2 dollars on clearance, you gotta come up with a new recipe and boy I sure did!
This recipe is of course quick and easy and also fun to make. Not to mention delicious!
PREP TIME: 10-15 minutes
MARINATE TIME: at least a few hours, maybe overnight
COOK TIME: 10 minutes
LAMB BURGERS
INGREDIENTS: I didn't give measurements as I rarely use them. I eyeball and modify passed on what spices I like and don't like
- lamb
- shallots
- parsley
- mint
- cilantro
- rosemary
- coriander
- oregano
- minced garlic or garlic powder
- 1 T of dijon mustard
- feta cheese
- cumin
- 1 t of dill
INSTRUCTIONS:- In a bowl, add all ingredients and mix thoroughly
- form 4 patties
- let it set at least an hour, up to overnight to allow flavors to mix
- Grill on stove or a grill
TZATZIKI
While the burgers are settling or cooking, mix together:- extra shallots
- lime juice to taste
- garlic
- feta cheese
- a bit of parsley and mint
PESTO TOPPING
While burgers are settling or cooking, mix together in the Food processor:- leftover mint and parsley
- 1 t of red pepper flakes
- olive oil
- salt and pepper
- feta cheese
All ready to serve!
I served mine over a bed of lettuce, topping with pesto, tzatziki, parsley , feta cheese, sun-dried tomatoes and a bit of olive oil!
As always, feel free to add and take away what you can find and what you have. Sadly I couldn't find any mint so it was left out this time!
