This is a great quick and easy meal for breakfast.
I have the recipe here as very small so you can try it to see if you like it before dividing in and making a huge batch.
Prep time: 5 minutes
Cook time: overnight
2 Tablespoons of chia seeds
1/2 cup of milk (use whatever you have and whatever you like-I used whole milk)
1 T of maple syrup (or honey, pure stevia and adjust according to taste. I would use less next time)
1/4-1/2 t of pure vanilla extract (I make my own extract and that amount is too much for me. I would half it next time)
A storage container that works well in the refrigerator (I used Tupperware)
- gather ingredients
- Pour ingredients into storage container
- Mix together in storage container-either shake or use a spoon
- Store overnight to allow chia seeds to soak
- In the morning, stir and serve
- Feel free to top with fruit, granola, etc.
It reminds me a bit of tapioca pudding (which I love!!!!) and is so easy to make. As I said, the vanilla flavor is strong because I make my own.
I definitely enjoyed and will be making it again. Make sure to adjust the recipe to your tastes and feel free 2x, 3x, or 4x the recipe!
